If only it were so simple as all that. There’s the perpetual risk of accidents during food processing. I for one keep a close eye on several product recall d-lists just to be safe, but even that’s not a guarantee.

And for coeliacs, the health issues can go well beyond a ‘bit of gas’, which some people seem to think is all there is to it. In the long term, if not properly managed, coeliac can lead to serious health issues through vitamin/mineral deficiencies and even malnutrition.
